#NikkyFeedingSouls + Wining and Dining with Jim White = Awesome!

A few months ago, I had the distinct honor of sitting down with my friend Jim White as a guest in his show, “Wining and Dining with Jim White,” on Vokal. I had a super-fantastic time, and I sure hope Jim did too.

What did Jim and I talk about? Aside from jokingly mangling each other’s names—I know “Phinyawatana” can be a mouthful—our conversation touched upon a lot of things. I told him a bit about my family and background. He loved the story of how my Texan mother shipped me to the US as a teenager after I lost a bet with her.

Another thing we had a chat about is how I got into the restaurant business and started Asian Mint. I described to Jim the nature of Asian Mint as a family business, and how I treat everyone who works with me like family. Many members of my team, whom I call Mintees, have been with us for years. I enjoy playing the role of mentor to my team.

I also shared with Jim my passion for helping the Dallas culinary industry evolve through education and scholarships. We touched upon the work that organizations like the Texas Restaurant Association Education Foundation and Les Dames d’Escoffier Dallas are doing to raise up future culinary leaders in the country.

Lastly, I did a demo on how to cook Pad Thai. It’s an easy recipe that I’m pretty sure you’ll enjoy.
